Ms. Ngoc Yen (25 years old, living in Phu Hoa commune), the owner of the restaurant, shared: “This is my mother’s profession. After she passed away, I started to “take over the business”. My family has been selling banh xeo for more than ten years, starting with traditional pork banh xeo. However, more and more people wanted the restaurant to change the pork flavor to duck, so the restaurant decided to innovate. Although duck is harder to make, customers kept praising it, so we have been selling it until now.”

With her hands nimbly stirring the dough and turning the cake to avoid burning, Ms. Ngoc Yen excitedly told us: "The duck meat is carefully prepared, then minced into bite-sized pieces. The soft bones are ground and mixed with the meat to make it sweeter and more delicious."
The pancake filling has a unique flavor thanks to the duck meat.
The cake filling can be added with well-beaten eggs, poured over the golden surface of the cake, mixed with the fragrant fatty coconut milk and the sweetness of cassava, the crunchy taste of the sesban flower creates an irresistible attraction.
Each banh xeo also comes with a rich basket of raw vegetables, especially vegetables such as lolot leaves, lagerstroemia, cat loi... all of which are picked fresh every day by local people.
Duck meat pancakes are affordable.
The restaurant is open from 9am to 5pm. If it sells out early, it clears up early. Some days, the pancakes are sold out by 3 or 4pm. Each duck pancake here costs 22,000 VND.
“In the countryside, the selling price is affordable. I make little profit, but many people support me regularly,” Ngoc Yen said with a smile.

Many diners are surprised when they try it for the first time. “Duck meat as a filling for banh xeo seems strange but it is suitable, sweet, soft, not fishy at all, combined with a crispy crust and fresh vegetables makes the dish more attractive”, Ms. Loan Anh, living in Binh Duc ward ( An Giang province) felt when she tried duck meat banh xeo for the first time.
Some people even shared that every time they come to Phu Hoa, they have to stop by the restaurant because the duck meat pancakes here are rich in flavor, the fish sauce is very well mixed, and they never get tired of eating them.
