The restaurant was taken over by Ms. Dao from her mother, Ms. Chieu, who is also the name of the restaurant.

Confiding with Tuoi Tre Online , Ms. Dao said that at first her family only made all kinds of meatloaf for sale, but to support the family after moving to the South, her mother brought with her the flavors of her homeland and used the meatloaf making profession to sell vermicelli with meatloaf.

“At first, the old lady carried her goods around Bac Hai residential area to sell, but gradually she opened a small shop in the alley and when many people knew about it, she moved here. Thanks to that noodle stall, my siblings and I grew up. Now we help our mother take over the noodle shop because the old lady is very old.”
Mrs. Dao is the main seller and sometimes has a younger sister helping her sell, while Mrs. Vuong - who used to be the main seller - is in charge of making the patties.

“When I was young, I also helped my mother sell and make sausages, but I never thought I would follow in her footsteps.
Before that, I worked in a company, but maybe fate brought me back to this noodle shop" - Ms. Dao said happily.
The restaurant has an upper floor, although the space is not too big, only a dozen tables but it is very comfortable to sit, there is even a driveway to park motorbikes inside.
Customers mainly come to buy take-out sausage, while bun moc is only sold a lot in the morning, so the number of customers is not so large that there is not a shortage of seats.
Handmade sausage, original meat
A bowl of vermicelli with meatballs was brought out with a "full" variety of meatballs, and it's true that the meatballs here are very different from other shops.
Each type of sausage has a different flavor, sometimes you can bite into a little bit of fatty fat from fatty sausage, fried sausage, sometimes the fragrant smell of cinnamon sausage and balance the taste with the lightness of pork sausage.

The meatballs here are not mixed with wood ear mushrooms, they are ground finely and rolled into balls like beef balls. According to the owner, these are meatballs made from the original Northern-style minced pork.
The common point of all types of sausage is the chewy texture, the bite is full and the meat is sweet without too much flour, accompanied by a piece of stewed young ribs.
Ms. Dao shared: "At 3-4am, I have to go to the market to buy fresh meat to grind into patties, then bring the new patties to the shop to sell immediately. The meat must be fresh to produce such quality patties.
When the meatloaf is sold out, we will no longer sell noodles, because customers mainly come to eat the meatloaf.
In addition, the restaurant also sells rice cakes to sandwich with sausage and dipped in salt and pepper, very suitable for breakfast.
Mr. Thinh, a son of Mrs. Chieu, expressed: "After all, this is the legacy that the old lady left behind, the noodle shop is also a place where brothers and sisters come and meet each other."
For Mr. Thinh, this dish of vermicelli with meatballs contains his childhood memories, from his mother's love to the place where he gathered with friends.
