Vegetables should not be eaten raw

Báo Thanh niênBáo Thanh niên11/12/2023

Vegetables and fruits are part of a healthy, balanced diet. Many people mistakenly believe that eating raw vegetables provides more nutrients and helps reduce the risk of certain diseases.

However, raw vegetables can contain harmful bacteria such as E. coli or tapeworm eggs, which affect the digestive system.

Deepika Jayaswal, a nutritionist in India, said high temperatures will break down hard fibers and neutralize harmful compounds in vegetables.

Below are some vegetables that can affect health when eaten raw, according to the health site HealthShots (India).

Raw potatoes can cause indigestion, bloating and stomach cramps

Potato

Raw potatoes can cause indigestion, bloating, and stomach cramps. They also contain solanine, which can cause vomiting, diarrhea, and abdominal pain if eaten in large amounts. Fortunately, when cooked, the solanine in potatoes is broken down and does not pose a health risk.

Eggplant

Similar to potatoes, raw eggplants also contain solanine, which can cause nausea, vomiting, and other digestive problems. Grilled or sauteed eggplants are not only delicious but also good for your health.

Spinach

Raw spinach often contains E. coli bacteria, which can cause stomach pain and digestive problems, Jayaswal said. Cooking spinach helps prevent the growth of E. coli bacteria and releases more nutrients.

Broccoli

Cooked broccoli is easier to digest and contains more nutrients than raw broccoli. Whether steamed or sautéed, broccoli retains its nutrients and reduces the risk of bloating.

Mini Cabbage

Baby cabbage is a nutritious food. When cooked, it not only enhances the flavor but also makes it easier to digest.
