During the water-dropping season in the cajuput forest of Ca Mau, I was surprised to see people trying to catch freshwater fish, giant prawns, and giant forest eels.

We had the opportunity to follow the farmers of the U Minh Ha cajuput forest to visit fish traps, remove eel traps, visit snake traps, visit bee nests to collect honey...; or visit the rice-shrimp areas of Bien Bach Dong, Tri Luc (Thoi Binh district), Khanh Thuan (U Minh district), Tran Hoi (Tran Van Thoi district) to harvest the crayfish crop, watch the people bring the crops to the fields..., feel the bustling life in the countryside and enjoy the culinary dishes that are carefully created from the sweat and effort of the honest farmers of Ca Mau.

When the north wind comes, the people of Khanh Thuan (U Minh district, Ca Mau province) enter the winter-spring rice harvest season. This rice crop, the people are very excited because of the bumper crop and good prices.

After harvesting rice, the water flows down the canal, which is also the time when Mr. Nguyen Hoang Nghiem (Quyen Thien hamlet, Bien Bach Dong commune, Thoi Binh district, Ca Mau province) starts harvesting crayfish in the water drop season.

As the water recedes, people set up beds to bring crops to the fields, including a model of growing squash. (Photo taken in Tran Hoi commune, Tran Van Thoi district, Ca Mau province).

This season, the water in the U Minh Ha cajuput forest begins to dry up, eels, snakes, turtles, fish, and shrimps go down to the canal. Mr. Huynh Vu Hoang used a bamboo tube to catch bright yellow forest eels, larger than half a kilogram.

The hundreds of hectares of cajuput forest owned by Mr. Muoi Ngọt (Hamlet 4, Khanh Binh Tay Bac commune, Tran Van Thoi district, Ca Mau province) each harvests hundreds of liters of honey from the profession of beekeeping during the low-water season.
