Tapioca starch 40 grams

Sugar 430 grams

Wash the peeled mung beans, soak for 1 - 2 hours until they expand. Add water to cover the beans and cook.

When the beans are cooked, add half a teaspoon of salt and 2 teaspoons of sugar (30gr), use a spoon to mash them (or put them in a blender to puree).

After the beans are soft, continue to cook until they are slightly dry and can be rolled into balls. Next, roll the beans into small balls.

Mix the rice flour: Slowly add about 200ml of warm water to the glutinous rice flour. If you want the balls to be chewier, you can add 30 - 40gr of tapioca starch. Knead until the dough is no longer sticky, then let the dough rest for about 10 minutes.

Molding: Take a sufficient amount of dough, about the size of a thumb, spread it evenly, then put the filling in the middle, carefully wrap the filling tightly. Be careful to wrap tightly to avoid the filling falling out during the boiling process.

Cook sweet rice balls

Boil a pot of water, add the dumplings and cook. When the dumplings float to the top, they are cooked. Quickly remove them to a bowl of cold water to firm up.

Then you take the balls out and put them in the pre-cooked sugar water pot. Put the pot of sugar water on the stove, cook over low heat, just enough to heat the pot so the balls absorb the sugar.

Scoop the pudding into bowls, add roasted white sesame seeds and coconut milk and enjoy.
