The special thing is that the catfish used in this dish must be the type of fish that lives in the Co Chien River, where the water source is rich in alluvium, helping the catfish here have a characteristic sweet and fatty flavor.

Catfish (also known as carp) is a delicious and fatty fish that often lives at the bottom of rivers. It often appears in large numbers in the fourth and fifth lunar months every year. The fish has a long body, a flat cone-shaped head and a white belly. Catfish meat is not only delicious but also rich in nutrients with ingredients such as omega 3, protein, calcium, fat, etc.

This dish originates from My Hoa tofu village - a traditional village with over a hundred years of history. Through many ups and downs, tofu from My Hoa village has become one of the typical dishes of Vietnamese cuisine.

Coming to My Hoa tofu skin craft village, you can always see steam boilers, smoking furnaces, red-hot coals, bustling, especially before the big full moon days of the year (January, July, October of the lunar calendar) and the days before Tet, preparing products for the Tet market.

Tofu skin is made from pure soybeans, then fried to create a golden, crispy crust but still retains the delicious, fatty flavor. It is known that on average, to produce 1kg of tofu skin, about 2.4kg of fresh soybeans must be used. This is a vegetarian dish that is loved by many people and is used on many occasions such as holidays, Tet or in family meals in the West.
